The Metro Chef will drive culinary excellence and improved consistency of Prepared Foods within a pre-determined metro area. This will include improving culinary execution of existing programs to meet regional standards plus support developing new culinary offerings at each store, to reflect seasonal geographic needs. Primary daily responsibility will be splitting their time between 2 stores producing recipes in-store for retail. In addition, they will train associates and leadership regarding presentation and execution of the culinary offerings and quality assurance for all prepared food sold in their stores. It is the responsibility of the Metro Chef to insure the recipes they create meet financial criteria and that execution is done so to the strictest health and safety codes.


* Produce daily recipes for the metro stores assigned and ensure quality and par levels are maintained throughout the week. Daily recipes could be up to 10ea.

* Ensure food quality, quantity, freshness, and presentation meet all company standards.

* Must have a minimum of 3 years culinary leadership experience; i.e. lead cook, sous chef, chef etc.

* Assist with production for all Prepared Foods venues, following company recipes and SOPs

* Assist with reducing shrink by working recipes that utilize shrink into in-house production.

* Ensure all prepared items are labeled, dated, initialed, covered, and rotated.

* Document waste and spoilage using appropriate forms, and meet all spoilage targets.

* Ensure that production is done using correct measuring devices, and all recipes are accurately followed

* Monitor food loss and maintain spoilage sheets.

* Must be self-motivated and solution oriented.

* Keep department continually clean, well-maintained and organized

* Follow and comply with established procedures, including Weights and Measures, health and sanitation, and adhere to safe work practices.

* Passion and knowledge of natural foods

* Good communicator and motivator, able to work well with others and convey enthusiasm

* Operate and sanitize all equipment in a safe and proper manner.

* Give every customer immediate and undivided attention.

* Other related duties as assigned.
