POSITION PURPOSE

A Kitchen Manager is responsible for a clean, safe, and organized kitchen that produces great tasting, fresh, and artfully presented food from engaged team members. Kitchen Managers play an important role supporting our General Managers by overseeing the overall operation in the back of house and kitchen area(s) of our restaurants.

RESPONSIBILITIES

] Leads kitchen team in the preparation and execution of all menu items, including those for seasonal and specialty menu items for dine]in and to]go, and in some cases, Grab n Go and Catering; displays a mastery of knowledge and skills necessary to prepare and execute our full menu

] Ensures completion of food safety checklists to ensure proper food handling; responsible for troubleshooting, cleaning and maintenance of equipment, FIFO, thermometers, Food Safety checklist, and temperature checklist

] Responsible for the roll out of all seasonal and core menu changes, as well as all other food and beverage updates in restaurant; attends Food Fairs and other meetings and trainings geared towards

Kitchen Managers

] Maintains cleanliness and organization of all areas of the restaurant by following up with team members to ensure cleaning checklists are being followed, dishes are being washed promptly, trash is being removed, bathrooms are checked and cleaned consistently, kitchen equipment is properly cleaned, and detail cleaning occurs as necessary

] Maintains proper food par levels and uses prep sheets to prepare correct levels of food; assists General Manager in completing inventory, as well as the inputting and reconciliation of food and produce orders

] Monitors food waste and inventory and resolves food quality issues

] Maintains and manages food cost within the restaurant; if issues arise, helps to troubleshoot the problem and come up with a solution

] Manages labor deployment in the kitchen to ensure hourly labor is within parameters of set labor budget

] Ensures proper set up and preparation in the kitchen by all team members

] Directs and follows up with kitchen team to ensure that all opening, mid, and closing procedures are being followed

] Monitors kitchen equipment and ensures it is kept in good repair. If items break down, makes sure they are repaired as quickly as possible

] Partners with General Manager to recruit, interview, hire, and retain a kitchen team of all top performers;

] Utilizes develop journals to own the training, cross training, and development of kitchen team; identifies Head Cooks as well as future Kitchen Managers

] Has an adequate understanding of HR policies and procedures and is able to lead difficult conversations, manages team member's performance, and resolves potential conflicts amongst team members

REQUIREMENTS

] Associate's Degree (A.A.) or equivalent from a 2]year college or technical school; or six months to one year related experience or training.

] Must have State/Local Food Handler's certifications (varies by city and state)

] Must have State/Local Alcohol Training and/or certifications (varies by city and state)

] Computer skills

] Flexibility in schedule with the ability to work early mornings, weekends, and evenings

] Displays desired 10 qualities
